There’s nothing like popping a fresh bottle of bubbly to kick off the weekend, am I right? I really only used to only enjoy champagne for New Years or to celebrate something special, but soon grew to appreciate it as an “anytime” drink!

While of course delicious on its own, champagne also lends itself to be the perfect base for a wide range of spirit and/or flavor infusions! Whether you’re looking for something to mix up your Sunday brunch drink of choice, or just interested in trying out something new, keep reading for 3 super quick & easy recipes!

(Side note: I personally use La Marca prosecco because I love the taste – and price! – so feel free to use whatever bubbly you have on hand… champagne, prosecco, cava, etc!)

1. French 75

Such a classic, and for good reason. For a refreshing but strong bubbly drink, French 75 is a go-to. It’s citrusy, has a touch of sweetness, and uses just a few simple ingredients. I also love ordering this drink out because it’s something nearly every restaurant knows and can make!

Here’s how to make it:

1 oz. gin
0.75 oz. fresh lemon juice
0.5 oz. simple syrup
champagne to fill the glass
garnish with lemon twist

2. Moscow Mule Mimosa

The perfect combination of two refreshing drinks, these Moscow Mule Mimosas are a delicious spin on a brunch classic! The spicy bite from the ginger beer and tartness from lime juice are a perfect balance to the champagne. I also love the subtle flavor and sweetness from adding cointreau, but feel free to omit if you’re not a fan of orange!

Here’s how to make it:

1 oz. vodka
0.5 oz. cointreau
1 oz. ginger beer
0.5 oz. fresh lime juice
champagne to fill the glass
*for an extra special touch, coat the rim in a mixture of sugar and lime zest

3. Grapefruit Mimosa

The simplest of the 3, this Grapefruit Mimosa is still as equally delicious. Although I would absolutely drink this year round, it would be especially refreshing in spring and summer! Campari would also be a great alternative to St-Germain for those favoring a bitter vs. sweet taste.

Here’s how to make it:

1 oz. grapefruit juice
0.5 oz. St-Germain
optional: 1 oz. vodka for an extra kick!
